
I served this salad with MLTS (see my previous post for the fantastic steak recipe) and it was big hit. The salad is 'very' simple, nothing dominates the flavor, perfect as a side salad. The concentrate taste of micro veggies are refreshing and tasty. Here is the recipe.
Ingredients (serving for 2)
* Spring mix salad - 2. 5 ounces
* 3/4 cup of rainbow micro veggies
* 1/2 cup of cherry tomato
Dressing
* 1/2 table spoon of light raspberry vinaigrette
(optional, you can replace it with using any wine vinaigrette, but recommended for the refreshing aroma and taste. If you want stronger Asian dressing taste, use soy sauce. Do not add any salt if you are using soy sauce)
* 1 table spoon of apple vinegar
* 2 table spoons of olive oil
* 1/2 teaspoon of sesame oil (Use little bit because it has strong aroma. Although this is essential, you will want to give only a hint of the scent to the dressing)
* 3/4 table spoon of maple syrup or honey
* 3/4 teaspoon of roasted sesame
* 1/3 teaspoon of sea salt
Directions
1. WASH your greens well (even if it is pre-washed!) and drain. Place in a bowl.
2. Cut the cherry tomato in half and sprinkle into the greens
3. Mix all dressing ingredients in a small cup, stir well to blend and add to the salad.
4. Serve immediately.
